Role Title: Lead Baker & Patisserie Chef

Join Coleg Cambria as our Lead Baker & Patisserie Chef at our vibrant Yale site. Working alongside our Head Chef, you will lead a dedicated bakery team, create contemporary menu items using locally sourced Welsh ingredients, and help drive our wholesale and catering expansion. This role offers a unique balance: the creative spark and commercial focus of the hospitality industry, paired with the stability, predictable routine, and purpose of an educational environment.

What You'll Do
  • Lead Bakery Production: Oversee daily baking for our coffee shops, main restaurant, and wholesale trade contracts.
  • Design Welsh-Inspired Menus: Create sustainable, modern patisserie items using locally sourced ingredients.
  • Support Growth & Events: Help launch new catering outlets and deliver food for college and external events
  • Inspire & Mentor: Coach culinary students in practical kitchen environments, helping them build confidence and industry skills.
  • Drive Food Production: Oversee food preparation across our patisserie coffee shop, and the main Ial restaurant.
  • Lead Functions & Step Up: Help run external events and take charge of daily kitchen operations whenever the Head Chef is away.

Essential Requirements
  • Excellent kitchen skills combined with outstanding cookery and purchasing skills
  • Skilled in patisserie techniques and baking
  • Excellent knowledge of current trends in food and food production
  • Basic Food Hygiene Qualification
  • Ability to work flexible hours including evenings as required over a 7 day working week.
